GuaCOCOmole


Would it be a stretch to say that a life without guacamole is a life not worth living? If you're a Texan, I think this phrase may ring true...it certainly does for me. But not all guac is created equal. I like mine with just a hint of spice, lots of cilantro and a hefty dose of lime. Store bought just won't cut it. It has to be super fresh- ideally prepared immediately before enjoying. The avocados must be pristine and perfectly ripe. And I'm not really into fancy additions like mango, edamame or salmon roe. I'm a purist when it comes to this iconic Mexican dip: avocado, cilantro, lime, jalapeño and salt. That's it! We have to keep this stuff out of my toddler's reach or he will literally eat the whole bowl. Like lick it clean- I'm not even kidding. I promise you'll find yourself devouring this luscious latin spread with an equal amount of zeal!

 

*prep time: 10 min. *cook time: 5 min. *makes about 3 cups


INGREDIENTS

3 ripe Haas avocados

1 jalapeño (with seeds) minced

1 TBSP finely minced red onion

1/4 cup chopped cilantro

2 limes, juiced

1 tsp salt

 

INSTRUCTIONS

Combine jalapeño, onion, cilantro, lime juice and salt in the bottom of a large bowl. Mash in avocados with two forks. Check for seasoning. Serve immediately.
